Luca's Easy, Gluten Free Pumpkin Spice Loaf

When this time of the year comes, I always want to add some pumpkin spice to everything. That is why I wanted to create a pumpkin spice loaf, but a healthier and gluten-free version of it! I promise you that it is a very moist and flavorful fall treat...
Ingredients:
160 gr. pumpkin puree
100 gr. sugar
180 gr. oat flour
120 ml oil of choice, I made it with olive oil
50 ml water
2 eggs
1 teaspoon of cinnamon
1 teaspoon of baking powder
for the icing: low-fat Greek yogurt, cinnamon, honey, and water
Instructions:
Preheat the oven to 180 Celsius and prepare a loaf pan with parchment paper.
In a large bowl, mix together the pumpkin puree and the sugar. Then add oil, water, and eggs. The next step is to add the oat flour, cinnamon, and baking powder. Stir it until it is well combined.
Lastly, pour it into the baking pan and bake in the oven for 35-40 minutes or until a toothpick comes out clean.
I would recommend preparing a delicious and light frosting to pour on top of our treat. You can easily make this cream. Just combine light Greek yogurt with cinnamon and honey. You can adjust the consistency to your liking by adding water to it.
Now pour this delicious light mass on top of your pumpkin spice loaf.
